Have you ever created an "accidental" recipe? Well I have and this would be one of them! Family was coming over, I realized I had not thought through a salad recipe and decided to go ahead with whatever vegetable happened to be in my fridge. It was definitely a happy accident, as it's become a hit at parties and family gatherings alike. All of the flavours come together nicely in this lemony delicious salad.

Fresh Salad
Ingredients:
1 head of romaine lettuce
2
tomatoes
1/2 red onion (diced)
1 bunch of green onions
1-2 avocado
1/2
cup toasted slivered almonds
3 slices of bread for homemade croutons
Dressing:
3 tablespoons white sugar
3 tablespoons lemon juice
3 tablespoons olive oil
1/2 teaspoon diced onion or onion powder
1/4 teaspoon Dijon-style prepared mustard
1/8 teaspoon salt
1.) Prepare salad by chopping vegetables.

Toast slivered almonds and croutons separately. To make croutons, cup up day
old bread, sprinkle with olive oil, garlic salt and pepper. Bake
at 400 degrees in the oven for 10 minutes, keep a very close eye on them as
they can burn very easily (same goes for the almonds, minus the seasoning and
olive oil)

Whisk all of the dressing ingredients above. Pour over salad and top with croutons and
almonds.
